Ferment the first round 48 hours at 20-26 C, strain the grains out, then bottle with a little fresh sugar for 24-48 hours to build fizz. Chill once it tastes right.
How the batch math works
Everything scales per liter of water: about 50 g of sugar dissolved in it, roughly 25 g of water kefir grains, and for the flavored route about 60 g of dried fruit plus 1 tablespoon of lemon juice per liter. Dissolve the sugar fully in warm water, cool to room temperature before the grains go in, and keep the jar out of direct sun.
Culturing milk instead? The milk kefir grain ratio calculator sizes grains by weight, and the kefir grains propagation calculator plans how fast either kind of grain multiplies.
Frequently asked questions
What kind of sugar works best?
Plain white or organic cane sugar gives the cleanest, most predictable ferment. A pinch of molasses or a teaspoon of minerals per liter helps the grains thrive in all-white-sugar batches. Avoid honey at first - its antimicrobial properties slow the culture until it adapts.
Which dried fruits should I use for flavoring?
Unsulfured raisins, figs, dates and dried apricots all work well and feed the fizz during the second ferment. Avoid fruits treated with sulfur dioxide, which inhibits the culture, and add citrus as juice rather than slices so nothing moldy sits above the liquid.
Why are my water kefir grains not multiplying?
Water kefir grains need minerals: try a pinch of baking soda, a slice of lemon or a quarter teaspoon of molasses per liter, and keep them out of prolonged metal contact. Very warm or very cold rooms also stall growth - 20-26 C keeps them active and multiplying.
