Yogurt Fermentation Time Calculator

Enter your incubator temperature and pick how tangy you want the finished yogurt to see how long to hold it before chilling.

Incubation temperature must be between 20 and 50 C.

Hold the mixture at temperature, undisturbed, until the set forms - jostling the jars breaks the curd. Chill immediately when the time is up; the cold stops souring right where you want it.

How the temperature adjustment works

Thermophilic yogurt cultures run fastest around 43 C, and activity roughly doubles for every 5 C closer you get and halves for every 5 C further away. The adjusted time is base hours x 2^((43 - temp) / 5), clamped to a 4-24 hour window. A batch that takes 8 hours at 43 C needs about 16 hours at 38 C and only 4 hours at 48 C.

hours = base x 2^((43 - tempC) / 5), clamped to 4-24 h

Planning the batch itself? The yogurt starter ratio calculator sizes the culture, and once the set yogurt is chilled the Greek yogurt straining calculator works out the yield and the whey.

Frequently asked questions

What temperature is best for incubating yogurt?

Around 42-44 C for thermophilic cultures: fast acid development with a clean, mild flavor. Cooler incubation (36-40 C) leans toward a softer, slightly ropey texture and takes longer; much above 48 C the cultures themselves start to suffer.

How do I hold a steady incubation temperature?

An Instant Pot or yogurt maker on the yogurt setting is the most reliable, then a cooler with warm water bottles around the jars. Oven-light tricks and heating pads drift a lot - check with a thermometer in water, not the air, since the milk itself sets the pace.

Can I stop the ferment early or run it longer?

Both, within reason: chilling stops acid development almost immediately, and an extra hour or two just deepens the tang. Beyond that the curd tightens and whey pools. Taste at the adjusted time, then refrigerate - the flavor keeps developing slightly for the first day even chilled.
